The George Hotel was established in 1854 and is Ballarat s second licensed hotel. It has played a key part in the city of Ballarat s social history. In 1854 troops met in the dining room to plan the siege of the Eureka Stockade. The dramatic battle between gold miners and the Government forces at Ballarat can be seen at Sovereign Hill s Blood on the Southern Cross , sound and light show each evening. The George Hotel has undergone a major transformation with the function, balcony, boardroom and accommodation sector now complete. It is now currently undergoing extensive renovation to the ground floor, incorporating the Heritage Bar, the Cafe/Restaurant and the rear Function room. The Hotel now offers luxury, serviced accommodation in a traditional hotel atmosphere.
